Pork loin with panela sauce

Ingredients

  • 1 kg Pork loin
  • 3 garlic cloves
  • Red onions and Peppers
  • 100 ml Soy sauce
  • 50 ml Beer
  • 50 ml Olive oil
  • 800g La Gloria powdered panela
  • 70 g Butter

Preparation

Marinate the pork loin in garlic, salt, peppers, onions, soy sauce and beer. Sear in a hot pan with the olive oil.

Cut the pork into slices.

In a saucepan, place the butter along with some water. Add the 800 g of La Gloria powdered panela and cook at low fire until it reaches a soft texture.

Serve the pork loins portions and add the panela sauce.

Natilla (Colombian Blancmange)

Ingredientes

  • 2 liters of milk
  • 2 cups of cornstarch
  • 1 pound of powdered Panela La Gloria
  • Four cinnamon sticks
  • 2 tablespoons of butter

Preparation

Mix 1 1/2 liters of milk with cinnamon sticks and the powdered panela.

In a pot, bring to a boil while removing the foam.

In a bowl, dissolve the cornstarch and butter in half a liter of milk and add to the initial mixture.

Stir and cook over low heat for about 10 minutes.

Pour the mixture into a container and refrigerate until obtaining a solid, yet soft texture.

Milk curd with panela syrup

Ingredients

  • 15 cups unpasteurized milk
  • 1/4 tablet of rennet
  • 2 teaspoons of salt
  • 1 cup of panela, cut into small pieces
  • 1/2 cup of water

Preparation

Heat the milk in a pot until it reaches a temperature of 36 ° C (96.8 ° F).
Add the salt and rennet, and remove from heat.

Let stand at room temperature. When it begins to sour, drain the serum and refrigerate.

Finally cut in portions.

Melt Panela La Gloria with water over medium heat to make the syrup.

Pour the syrup over the curd portions. Enjoy!

Mojito

Ingredients

  • 10 g Peppermint
  • Lemon juice
  • 50 g powdered Panela La Gloria
  • Rum
  • Ice

Preparation

Macerate the peppermint in a long glass.

Serve the desired amount of rum and add lemon juice to taste.

Blend the ice along with the powdered panela and add water if the consistency is too thick.

Add the ice to the glass with the above mixture and incorporate well.

Optional: You can decorate it with a fresh peppermint branch

Agua de Panela

Ingredients

  • 1 Liter of water
  • 75 g La Gloria powdered panela.

Preparation

  • Boil the water in a pot
  • Add the powdered panela and cook unti dissolved.
